CSA Zero: garlic scape stir fry, gang doenjang
This year, like every CSA year, I endeavor to go CSA zero (that’s what I’m calling it when I don’t throw half the share in the trash.) I’m starting out strong this year by forcing myself to eat salad (ugh) twice in one week. I can already feel my lettuce tolerance dwindling. I also don’t especially like red radishes, but I’m making a spicy pickle situation with them that should at least be okay with rice.
Here’s what I’m making with my CSA stuff this week:
Radishes: Quick pickles with a lot of gochugaru. Ingredients: 1 bunch radishes, washed and quartered (or halved depending on the size), 3/4 cup rice vinegar and 3/4 cup water, less than a tablespoon, but more than a half tablespoon of kosher salt, 1 tbs plum syrup and a half tablespoon of sugar, 2 tbs (give or take) gochugaru. Mix water, vinegar, salt and sweeteners in a small saucepan. Bring to a boil. Toss the radishes with the gochugaru then cram into a glass jar. Pour vinegar mix over the top. Set aside to cool, then refrigerate. I’ll eat these later in the week as a banchan.
Potato pizza a great vegan pizza. Somewhat time consuming, but if you have a mandolin it’s not especially difficult.
Garlic scape and carrot stir fry with impossible beef. Instead of using 8oz of pork I’m using 140 grams of impossible beef, because I only need 200 grams for the gang doenjang I’m making later in the week, but the blocks are 340 grams. I’ve made this stir fry without any meat substitute and it’s really good. My favorite way of eating garlic scapes for sure.
I have a bunch of chard and some collards, so later this week I’m going to use the chard to have with gang doenjang (which I’ll be making with, surprise, less chilis). I’m going to do some sort of muchim with the collards, I assume.
I still have some lettuce and arugula that I need to figure out how to use, as well as some herbs, but I think we’re off to a positive start this year, at least as far as planning goes.
If you have any salads that you actually like eating (that use lettuce) let me know. Neither of us have a pressing interest in salad, but I feel greater guilt about just throwing the lettuce in the trash than Noah does. I finally bought a salad spinner, which I am telling myself will make some sort of difference in my lettuce consumption this summer. Seriously if you have any ideas let me know.
