A few different ways to use zucchini
It’s the zucchini time of year. I’m trying my best with everything, but, uh, guys it is a lot of summer squash. Here are some ways that I have used it recently that I have especially liked:
This smitten kitchen recipe for zucchini butter noodles. Pretty good! Serves no more than two, so if you’re feeding more people, that’s great because you use more zucchini!
Zucchini in the morning… it doesn’t have to be sweet! These savory muffins are really good, and, like, I am partial to zucchini bread and sweet things for breakfast, but sometimes it is nice to have savory for breakfast? Give these a go. Nice if you cut them in half and toast them, and maybe put a morningstar patty in the middle.
Green been and zucchini stir fry. Kinda like how it sounds. Several cloves of garlic, chopped. An inch or so of ginger, minced. Fry in scallion oil. Add a bit of shaoxing, add some white pepper, bit of soy sauce, bit of salt. Fine. Totally fine.
Have you considered adding a single zucchini to everything else you cook? Just throwing that out there as an option…
I still have more zucchini to use. Maybe I’ll put some on a pizza? idk. When it comes to “what to do with zucchini” smitten kitchen is the be all end all. She has so many recipes for those green guys. The zucchini quesadillas are really good actually.
I also got more beets this week, so I’m going to try to workshop another beet cake. tbd on if that pans out. If it does, you’ll be the first to know.
